I haven´t really been eating cheese for two years – or actually I haven´t been eating any kind of dairy products for the past two years because I felt bad everytime I had something that contained milk. But recently I discovered (and I´m sitting with a big smile on my face) that cheese dosen´t make me feel bad. So today something amazing happened – that is actually worth writing on the world wide web: I bought a cheese! “Wow she is crazy” – you might think. And my answer to that is: “Yep – and I´m feeling pretty good about it.” But I don´t wanna just eat cheese (or actually I do – but maybe that will be a bit too much gambling) so therefore I made up this delicious potato-salad-kind-of-thing with peppers, lemons, spinach, olives and of course goat cheese.
The 5 tastes
This salad is a combination of all my favorite things and together it´s an amazing combination with all kinds of different tastes and textures – and it´s really easy to make. The potatoes and the peppers give the dish some sweetness, the lemon brings the sourness, the spinach represents the bitterness and the freshness and the olives and the goat cheese gives the dish both the salt and the umami. So in total all of the 5 tastes are represented which will make your body really satisfied and filled. So here comes the recipe.
Ingredients:
500 grams of new potatoes
3 peppers (in different colors – that is VERY important!)
1 organic lemon (and it has to be organic because you will eat the peel)
100 gram of soft goat cheese (or any kind of feta if you´re (for some reason) are not a big fan of goat)
50-100 gram of black kalamata olives
100 gram of fresh spinac
Fresh rosemary
A little olive oil
salt and pepper
How to do the potato salad
Wash the potatoes and cut them in wedges. Cut the lemon in half and after that in slices. But the potatoes and the lemon in a baking tray with baking paper and sprinkle some olive oil over it together with salt, pepper and rosemary. Mix it all together and put it in the oven. When the potatoes are half-done cut the peppers in to rustic pieces and put it in the oven to mixed up with the potatoes.
When it´s all nice and tender mix the potato/pepper/lemon-stuff with the spinach, goat cheese (cut into slices) and the olives (cut in half). The spinach and cheese will slowly melt together with the rest of the ingredients which is kind of the point. So don´t worry about mixing warm and cold stuff together.
This is kind of it. Simple, isn’t it? I told you so! And it´s sooooo tasty!
I normally just eat this salad as it is, but you can eat this with any kind of meat. Don´t eat it with fish – the salad will dominate fish. It is also really good the day after. I´m gonna bring this to work for my lunch – and I´m already looking forward to it even though I just finished eating it for dinner.
Things-to-do-wrong
– Forget to buy the olives with-out a stone otherwise it will be pretty hard to cut them in half. (yeah yeah – I forgot it. So I´m talking out of experience!)
– The standard one: not to cook the potatoes enough. That´s is always a fail.
– Otherwise this dish is pretty idiot-proof. Can´t really go wrong with all these delicious ingredients.
